Passion fruit and coconut self-saucing pudding


Pudding

1 cup self Raising flour
½ cup caster sugar
½ cup dessicated coconut
1 egg
2/3 coconut milk
80 G butter

Sauce

½ cup sugar
3 Tsp Corn flour
½ cup milk
Juice and zest of 2 limes
3 passion fruit halved or get passion fruit in cans

Cream and fresh passion fruit to serve


Preparation


Preheat the oven to 180 Degrees C
Sift flour in to bowl, stir with sugar and coconut

Whisk coconut milk, egg and butter together in a jug

Pour into flour mixture

Gently stir until combined

And Transfer to a baking dish

 

To make the sauce

Combine sugar and corn flour in a bowl pour over the pudding mixture
Combine milk and a third of a cup of lime juice and zest in a small saucepan .
Cook stirring over medium heat until mixture comes to the boil.
Remove from heat and stir in passion fruit pulp
Pour hot lime mixture over the pudding mixture

Bake for 30 minutes
Serve immediately and also can be served chilled

with cream or ice cream
