Lamb Madras

Ingredients

2 tsp chillie powder
2 Tsp coriander powder
2 tsp ground tumeric
1/4 tsp ground ginger
Salt and pepper
1 1/2 cup coconut milk(300 ml)
6 Tsp ghee
1 onion chopped
5 Cloves garlic crushhed
900 gm lamb cubed( some with bones taste better)
1 1/2 cup beef stock
2 tsp tamarind concentrate

Directions

Mix the spice Salt and pepper to a paste with a little of the coconut milk
Heat the Ghee and fry the chopped onion and garlic untill Golden
Add the paste and fry for 3 minutes
Stirring add the meat and stock,bring to the boil.
Cover and simmer gently for  45 minutes or until the meat is tender
Stir in the remaining coconut milk and the tamarind and simmer for 10 minutes until thick.
